Truffle Aioli Dip

It’s #meatlessmonday, we are trying to transition at home to eating less meat to reduce our carbon footprint and for better health. I’m also using this time to sharpen my skills in the kitchen and found this truffle aioli recipe that will satisfy your truffle cravings. It’s good with fries and even better with baked cauliflower in yes you guessed it - black truffle oil.


INGREDIENTS


1/2 c mayonnaise

1/2 c sour cream

1 tbsp truffle oil

1 tsp minced garlic

1/2 tsp pepper white, if possible

1 tbsp lemon juice


Combine ingredients and blend until smooth.


I baked cauliflower bites in garlic & truffle oil and salt & pepper to taste, at 25 mins at 450 (stirring once) and then sprinkled with fresh grated parmesan cheese and broiled for 3 mins. Top with parsley and dip in your aioli and enjoy!
